A classic Argentine sauce, heavily seasoned with various spices and a spicy kick. It is made with parsley, garlic, chili flakes, vinegar, oregano, and oil. It is a must-have when eating a choripan (a popular grilled sausage sandwich).
A beef bone hung above traditional wood-fired stoves to soak up smoke and cooking aromas. During festivals or when making large batches of sancocho (a traditional Panamanian chicken and vegetable stew), the bone was submerged in the pot to add a distinct flavor and then hung back up for future use. A single templador could last for a year or more.
